Made from Semillon grapes from our Cockfighter’s Ghost vineyard in Broke, that were left to ripen on the vine for a longer period to achieve a higher sugar concentration. The grapes were pressed, cold settled and the juice was concentrated by reverse osmosis to increase the sugar to 18 Baume. Half of the blend was fermented and matured in new French oak for 6 months, whilst the other half was in tank to retain fruit freshness. The wine was then carefully blended, lightly fined with skim milk, filtered and bottled.

A bright, golden yellow.
Lemon curd, citrus aromas with a slight honey and nutty character.
The palate is luscious and mouth filling with lemon curd flavours complemented by a honey note. The flavoursome palate is balanced by a long, citrus acid line.
