This wine is a classic blend of Cabernet Sauvignon (45%), Shiraz (30%) and Merlot (25%). The Cabernet and Shiraz are sourced from our Chairmans Vineyard, located in the heart of Blewitt
Springs, McLaren Vale, whilst the Merlot is sourced from a vineyard in Wrattonbully. The fruit was harvested and immediately transported to our winery in the Hunter Valley. Each variety was made separately, with primary fermentation taking place in stainless steel fermenters with pump overs taking place twice a day. At the end of fermentation the wine pressed off skins and put to French oak to undergo maturation for 12 months. The parcels were then blended filtered and bottled.
A very dry and warm growing season, with large rainfall in the first half of January that provided welcome relief for many vineyards. The rain, in conjunction with mild January temperatures, slowed down the rate of ripening, and vintage started just slightly earlier than normal. The warm and dry conditions continued through February, resulting in a very short and condensed vintage period. Varietal expression across all varieties is strong, showing a broad spectrum and depth of flavour and natural acidity.
